Pepperoni Lasagna Roll-Ups

For the past two nights, Q and I have enjoyed eating pepperoni lasagna roll-ups. Doesn't this mouth-watering picture make you want to have some right now?

You probably have all the ingredients on hand for this dish. Pair it with a salad, biscuits, and an easy dessert like cookies or brownies. This would be a great meal to make to take to someone who has just had a baby, recovering from surgery, or who has just lost a loved one. During my first surgery recovery, church friends brought over meals for us and it was such a blessing! Pasta dishes, soups and crock pot meals are great for being an encouragement to others. Try this new dish from Taste of Home. Your family will love it, and so will those with whom you bless this with.

Pepperoni Lasagna Roll-Ups

3 lasagna noodles
3/4 cup ricotta cheese
1/2 teaspoon minced chives
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
24 slices pepperoni
3 slices Swiss cheese, cut into thirds
1 cup meatless spaghetti sauce
1/4 cup shredded Parmesan cheese

Cook noodles according to package directions; drain. Combine ricotta cheese, chives, oregano and basil; spread 1/4 cup over each noodle to within 1/2 inch of edges. Top with pepperoni and Swiss cheese; carefully roll up. Place seam side down in a greased shallow 1-quart baking dish; top with spaghetti sauce. Cover and bake at 350 degrees for 20-25 minutes or until bubbly. Uncover; sprinkle with Parmesan cheese. Bake 5 minutes longer or until cheese is melted. Let stand for 5 minutes before serving.

*Note: I doubled the recipe so that we could enjoy it again for a second night. I also used shredded mozzarella cheese instead of the Swiss. It's super either way! Enjoy!

  1. Ohh looks so good I have made these before I love lasagna roll ups. I make these with Gluten Free lasagna noodles which are yummy as well. ~wish I could beam some of those roll ups over here!~Blessings

  4. Theo, I am slowly catching up on your blog and all the posts I missed, not knowing that you had a blog!

    Anyway, I came across this recipe a couple of days ago and liked it, and it helped me come up with a quick supper idea for yesterday before church. I had recently made pepperoni pizza using prebaked crusts. The crusts were gone, but I still had topping ingredients, and I had found some flour tortillas again at a store here recently! So, I had pepperoni pizza tortillas! :-)
